Spaghetti
Bolognese (serves 6)
Ingredients
·
500g
extra lean beef mince
·
2
carrots, finely diced
·
1
courgette, finely diced
·
1
red pepper, diced
·
2
garlic cloves, chopped
·
160g
mushrooms, quartered
·
2
tsp Worcestershire sauce
·
1
beef stock cube in 200ml boiling water
·
390g
tin of cooked green lentils, drained
·
400g
tin of chopped tomatoes
·
400g
tin of kidney beans, drained and rinsed
·
3
tbsp tomato puree
·
360g
wholegrain pasta (60g per person)
Method
1.
Coat
a large non stick pan with low calorie cooking spray
2. Gently cook
onions and garlic, until translucent
3. Add mince and
brown for 2-3 mins
4. Add carrots,
courgette, pepper, mushrooms, tomatoes, tomato puree, Worcestershire sauce and
stock, stir well to combine
5. Bring to boil,
reduce heat and leave to simmer for 20 minutes, stirring occasionally
6. Cook pasta as
per instructions on packet
7. Add kidney
beans and lentils to mince, leave to simmer for a further 5 mins
8.
Season
to taste and serve
